Each participant will be scoring their own loaves before Dan loads them into the oven, and we watch the baking process happen in real time. On day one, Dan will discuss in detail the many aspects of mixing, shaping, and baking, including dough hydration, flour blends, and whole grains. In his Anything But Basic Sourdough Bread Course, Dan will guide you through the entire process of baking his flagship bread, Country, known for its open crumb structure, creamy texture, and deeply caramelized crust. Participants also receive a portion of Dan's sourdough leaven, which as a student they will have fed and maintained already during class, and are given instructions for at home care. Each participant will receive 4-6 loaves of their very own hand - mixed sourdough breads to take home! Columbus, Oh. Students will learn Dans sophisticated yet simple shaping method, as well as discussing other techniques used at other bakeries. Dan has over a decade of experience in artisan baking, and has worked at the most renowned bakeries in the world, including Tartine Bakery and Jane bakeries in San Francisco, and Publican Quality Bread in Chicago.
